We are particular about the freshness and quality of eggs, vinegar, and oil, and it is a mayonnaise with a rich, sour and gentle taste. We only use domestic fresh eggs (“Pure Select Eggs”) that have been harvested within 3 days. For the vinegar, we use a special “Pure Select Vinegar” that is a blend of heat-applied mellow vinegar, white grape vinegar, brown rice vinegar, and barrel-aged malt vinegar. We use high quality canola, soybean and corn oils.
